Don't forget in all the excitement, to unhook the e-brake cable, like I did. Other than that, just find a balance point and Wal-la Wally, it's off!

You don't need to remove the body to replace the body mounts, just like you said you can raise the body one side at a time and replace the mounts.
Your biggest potential issue when replacing the mounts is the removal of the bolt (corrosion).

Such is life in the rust belt.

All of mine came out easily and it was a North Eastern car. Only one problem and that was one of the captive nuts spun, but no big deal.

I am doing a frame off for my car and it's the only way to go. That way everything gets done and is very easy to get to. I fould out that my body bushings were totally shot and with the dirt and scale had it all sand blasted and painted. Now it is great. I would highly recommend to do the body off. I made some 2X4 supports for the rear of the trunk and the firewall so that the load would be spread out. I then installed 3/8 eye hooks in the 2x4's and lifted the body off with cumalongs on each corner. The upper roof structure had to be beefed up somewhat, but worked out great.
